• Let it breathe at the temperature room for about 15 minutes
• Cut the block into two one-pound steaks.
• Heat up the fry-pan and put the steaks inside
• Slice and serve. Sprinkle with sea salt and freshly ground black pepper.
• Cook at low temperature and keep turning
• Place the meat on the cutting board and let it rest for about some minutes (at least 5 minutes)
